Chocolate Molten Pudding Cake
Here is an easy pudding cake (cake on top, molten chocolate on the bottom) that does not need to use a
water bath for baking. It works well as an easy-to-mix-in-the-pan type cake, uses no eggs, and creates a
luscious layer of chocolate. It’s fun and easy to make, and tastes delicious!! Do not worry about the large
amount of unsweetened cocoa, the pudding cake turns out very well indeed! We thank Kathy D. for this great

Ingredients
|
- 3/4 cup flour
- 2/3 cup white sugar
- 1/2 cup cocoa powder, divided
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 3 Tablespoons vegetable oil
- 2/3 cup brown sugar
- 1/4 cup good quality semi-sweet chocolate chips or dark chocolate, chopped
- 1 teaspoon vanilla
- 1 1/4 cup hot water

Directions

- Preheat oven to 350 degrees Fahrenheit
- Either in the pan, or preferably, in a separate bowl,
stir together the flour, white sugar, 1/4 cup cocoa,
baking powder, and the salt. Stir in the milk and
the vegetable oil, mix well but do not beat.
- If mixed separately, pour or scrape the mixture into
a greased 8x8-inch baking pan, and smooth the top.
- Sprinkle the brown sugar, the other 1/4 cup cocoa,
and the chocolate chips/chopped chocolate over the
top of the mixture in the pan. Do not stir.
- Stir the vanilla into the hot water, and pour this
mixture over the top of the layered batter, sugar,
and cocoa in the pan. Do not stir this!!!
- Bake at 350 degrees Fahrenheit for 30-35 minutes
until surface appears dry…do not over bake.

This cake just calls out for vanilla ice cream or a
tall glass of milk. Or invite friends to an elegant afternoon tea.
